(Ingredients of Instant Khaman Recipe) To make a batter
- Gram flour 200 grams (2 cups)
- semolina 100 grams (1 cup)
- 2 to 3 pinches of turmeric powder
- Salt – as per taste (less than 1 teaspoon)
- Eno salt – a little less than 3/4 teaspoon
- Green chili paste – 1 tsp
- Ginger paste – 1 teaspoon
- Lemon juice – 2 tbsp (2 medium-sized limes)
- 3/4 cup water
For snapping :–
- Oil – 1 teaspoon
- Green chili – 2 – 3 (cut into 2 pieces lengthwise)
- 1 tsp Mustard seeds (Rai)
- 8-10 Curry leaves
- Coriander leaves – 1 tbsp (finely chopped)
- Lemon juice – 1 teaspoon (if you want)
- Sugar – 1 teaspoon
- Salt – 1/4 teaspoon (as per taste)
How to prepare Khaman Batter- Method
First, take semolina in a large bowl, add gram flour and mix it well by adding turmeric powder, lemon juice, salt, green chili paste, ginger paste Add a little water, stir it with a spoon, there should be no lumps in the solution, Cover the gram flour solution for 20 minutes so that the gram flour can swell.
Now take a pressure cooker to steam it, 500 ml water in it.
